Turkey Sausage Stuffed Mushrooms

  • Hi all! I just tried this today & it came out fantastic. In this recipe you can use either turkey sausage or ground turkey (I used ground turkey)

    12 medium button mushrooms, washed & stemmed
    2 T olive oil

    Filling
    1 lb lean ground turkey (93/7) or 1/2 lb cooked turkey sausage, crumbled
    1/2 medium onion, finely chopped
    1/2 red pepper, finely chopped
    2 garlic cloves, minced
    (ground turkey only) 3 T oregano or Italian seasoning
    (ground turkey only) 2 T caraway seeds
    Pinch salt
    Pinch pepper

    Preheat oven to 375F.
    Heat oil in nonstick skillet on medium high heat. Place mushrooms stem side down in skillet. Sear for approx. 3 mins, then flip. Sear for an additional 3 min. Transfer seared mushrooms to baking sheet, stem side up. Fold filling ingredients together. Spoon a heaping teaspoon of filling into each mushroom. Bake for 25-30 min or until ground turkey mixture reaches 160F. Sprinkle with Parmesan cheese if desired. Serve immediately or store for later.
