Breakfast is pretty much always a veggie omelet; lunch is a huge salad with black beans, dressing and protein.
Dinner:
Sunday: spicy beef with mock cornbread
Monday: baked haddock, mashed faux-tatoes
Tuesday: I have leftover marinara so either eggplant lasagna or cauliflower crust pizza
Wednesday: leftover mock cornbread with sour cream and salsa, and an ear of corn from the farmer's market (yes, a splurge)
Thursday: steak, some sort of veggie

Breakfast is my everyday smoothie except now I am skipping the Greek Yogurt and adding a veggie protein powder from GNC. Lunch is always some kind of salad with a hard boiled egg. Since I am going vegetarian for a month I am doing P2.
Dinner
Monday: Quinoa / black bean burger with baked beans (measured a true serving size) Snacks: veggies with hummus, Coconut Milk Yogurt with fresh strawberries, pineapple chunks with pomegranate seeds, SF BP
Tuesday: Mexican Coleslaw
Wednesday: Zoodles with NSA marinara sauce
Thursday: Quinoa,beans, chick peas, pepper concoction lol
