Breakfast ideas.

  • This will probably be super unhelpful, but I had a bowl of Burgoo. Yeah, I ate stew for breakfast. I'm kind of weird that way.
  • I'm having an egg and spinach omelette
  • I'm on the run, so I packed half a sandwich. Yesterday I had oatmeal. The day before I had a homemade breakfast sandwich.

    I'm still lost on tasty, healthy, portable breakfasts, though. Haven't ever figured that out. Thus the half sandwich with mustard today.
  • Today I'm having scrambled eggs with fried pepperoni and colby-pepper jack cheese.
  • I love eating oats at my breakfast as they are healthy and eggs white which provides protein.
  • Everyday I have the exact same breakfast: 175 grams of plain fat free greek yogurt, with 1 teaspoon pure vanilla extract, 1 tablespoon of almond butter, 1 tablespoon of chia seeds and 1 cup of raspberries. Literally keeps me full until lunch as it is protein packed. It has about 25 grams of protein. It is also low in processed sugar.
  • I ate a chia pudding. It was delicious! I used chia seeds, milk, and maple syrup with orange.
  • 2 hard boiled eggs, 11g mayo, 18g homemade pickled jalapenos. My go to.
  • My favorite breakfasts that are ready within 5 minutes:

    1. Old fashioned oatmeal microwaved with slightly less water than the directions say. Stir in some milk, salt, and Kerrygold butter. :Homer Simpson drool: Top with 1-2 eggs that I've microwaved in my handy dandy microwaved-eggs contraption or fried.

    2. Half of a leftover twice baked potato, a serving of Heinz beans (the English kind - my fav) and 1-2 eggs.

    3. Fage Greek yogurt.

    4. Leftovers

    I cook my eggs on the stovetop far more often than I microwave them, but sometimes that's a much appreciated option.

    If I want to spend longer than those dishes require, I'll often make soft scrambled eggs or some other egg dish like huevos rancheros or a frittata (which then provides a quick breakfast the next several days as leftovers). I also love egg breakfast sandwiches, varying up the meats and toppings.

    For oatmeal, other ways I have it are with either peanut butter, almond butter, or Nutella mixed in. The last is very high in sugar and low in protein, but oh so good.

    I often eat non-breakfast foods for my first meal of the day.

    I'm calling this breakfast but I generally don't eat my 1st meal until I've been awake for a few hours. Lately the very first thing I consume is most often a cup of half caff coffee with milk. Less often, tea or vegetable juice.
  • I loooooooove oatmeal, but I'm diabetic and sometimes oatmeal is not a good breakfast for me. When I have it, I like steel cut oats cooked in half water, half whole milk, with butter and a little seasonal fruit.

    This morning I had two poached eggs and pre-cooked (thank you, whoever invented this miracle, yes, the real deal is better but it's hard to beat 20 seconds in the microwave!) bacon.

    My favorite breakfast is two scrambled eggs with a little cream cheese and lot of green onions.

    I have not found a good option for a portable breakfast. A friend of mine does mini frittatas in muffin tins and freezes them. Maybe that's portable if wrapped in wax paper?

    One tablespoon of sprouted wheat bears...

    Hot water with lemon...

    Freshly squeezed carrot juice...

    Fruit salad with cottage cheese, honey, walnuts...
