Was watching the morning show and there was a lady who invented low carb fries and other potato products that will be out soon.I think she said they will be called idaho light...Can't wait to try them. She said 20% were potato and the rest was cauliflower so this should be interesting
I love mock potato salad faked with cauli, so I'm sure these fries would be great too.
It does worry me that there are all these "low carb" engineered foods. I sort of thought that part of the whole idea of low carb was also whole foods and no fake foods. I think the low fat movement went off the rails when all the low fat alternatives came out so people ended up not really changing their eating habits, just switching from regular to low fat. And for most of us, with disaterous results. I wonder if low carb will go the same way - I'm fairly certain that the fake foods are to be used in moderation (and the low fat ones probably were too) but will I actually DO that? Or will I just be eating fake fries instead of regular and go back to my old habits?
