IP quiche with packet?

  • Has anyone ever attempted to make a quiche or frittata in the oven using an omelet packet?

    If so, what did you do?
  • I think an oven would be tricky. Maybe a mini-quiche in the microwave so you could monitor it and make sure it didn't get rubbery?
  • I didn't think about the microwave. That might be a better idea. I may be doing this for breakfast tomorrow or Thursday (weigh-in day; I like to eat something more substantial since I have over an hour drive to my clinic).
  • I am finding hot packets like soups really help curb hunger till the next meal time. Veggies help too
  • I really love the chicken noodle soup mixed in mashed cauliflower for lunch. One of my faves!

  • I know if you overheat IP protein it’s not good because it breaks down the protein - just FYI.
  • I would NOT microwave the omelette packet!! Very rubbery from micro!!

    I shook up the packet mix, used a non- stick pan with some Pam, added the omelete and then added my sauteed veggies (about 1/2 cup). Cook over low to medium heat (NEVER cook protein packets above medium or they get rubbery and stick.)

    The top will stay quite moist so when the rest is set, put the pan in the oven under broil just long enough to get the top to cook (a minute or two). Makes a perfect frittata!
