  • Hi everyone,

Just popping in to say Hi and wishing everyone a great day!
  • Got up wanting to bake something so I did. Ended up with 4 servings each of wildberry bread, chocolate chip mini muffins and maple cinnamon mini muffins. Saving for my evening snacks/IP servings to go with some hot herbal tea. I'm working towards having a variety of baked goods to have ready for when we go on our 2 week roadtrip to SW Utah in April. So far, I think the muffins will travel better. Been dehydrating some veggies to bring with me for road munchies, too. So far I love the zucchini and yellow squash chips. Thinking of trying dill pickles but not sure how they'll do. they're relatively cheap so if it doesn't work (ends up too salty or won't keep long, etc) it won't have cost me much. Hope everyone is having a great OP day!
  • Hi friends,
I'm enjoying reading everyone's daily chats and am inspired by your progress! I tried a new recipe the other night for dinner and really loved it. Rainbow chard with shallots (and an egg for good measure). Here it is:

    Olive Oil (to coat pan)
    1 Tbsp Garlic
    1 Shallot (chopped fine)
1 Bunch Rainbow Chard (remove leaves and julienne into 1/4" strips, chop stems into 1/2" slices)
    1 Tbsp Ground Mustard
    Salt and pepper to taste

Heat olive oil in pan. Add garlic until browned. Add shallot and cook until soft). Add chard stems, salt and pepper and cook until soft.

Add chard leaves and cook until wilted (add water/veggie stock if necessary). Add mustard.

Enjoy with sunnyside egg on top (reduce remaining dinner protein to compensate).

    Have a great day!
  • I am stopping in today too, to say hi... I feel a little sluggish this week and that I am not moving the scale like I want to and a few headaches for the past couple of days. how do you know if your body is out of Ketosis?

Sounds like a fantastic p4 recipe! I wonder if leeks would sub for shallots to fit p1?

Sounds relish! I was wondering if you could make that stuff ahead of time and how your store it. (Would be super handy when I'm working) also can you share where you found the recipies?
  • Changed my WI to thurs and down 3.4 this week and 2.5 inches. Does your clinic have a bell to ring? I'm down 21.4 in 5 weeks and I had to ring the bell, lol. Perhaps my greatest accomplishment was being 10% down in 5 weeks ☺️

Congrats!! You're killing it!! My clinic doesn't have a bell, thank goodness. I hate drawing attention to myself!
  • WTG jstbkuz! You've had some great losses. That is so motivating!

Good day here in CenTX land. My therapist and I discussed phasing off (pun intended) from weekly visits. I've been going since Nov and feel like I am really in a good place right now. Instead of stopping cold turkey we made an appnt for 2wks out to see how things are going.

I am such a convert from thinking I could never go talk to a stranger about my problems to thinking everybody needs therapy. I even recommended my therapist to a friend who was having trouble finding someone in her insurance network.

Talked to my coach about my business trip next week and she gave me a great pep talk about staying OP. I decided long ago just to follow her guidance. She has yet to steer me wrong and IP and her suggestions are working for me so I am just going to go with it! I am packing a cooler with pelligrino, veggies and my dressing as backup foods.
  • Oh, I meant to give an update on my neighborhood weight loss challenge. Started out slow for me since most people were starting diets and having big losses. But I figured slow and steady will win the race so I have been reporting my couple of pounds each week. As of last Thurs, I was in 4th place with less than 1% difference between standings 1-4. With only 3 weeks to go I thought I was in a very good place to place in the top 3 (and win some money!).

Then these ladies went and got all crazy on me with their liquid diets and running miles upon miles of workouts. I am not willing to jeopardize my health or jack up my diet over money.

I am using my home scale WI for this competition and only lost 1lb since last Wed. Only a few weeks to go so it is still anyone's game. Valentine's day will be a struggle for some this weekend. Interested to see how the next couple of weeks plays out.
  • Seriously stress week so far and as a result stress eating. Gained three pounds when I weighed in this morning. I know that is not a true weight as it is probably food and fluid retention but I will own it and log it in as my weekly weight in.
  • I've had my doctor for 2 years, but today was the first time I've ever seen her and I was pleasantly surprised to hear that she not only knows OF ketogenic diets, she actually recommends them to her obese patients.

She was concerned that it was Atkins, but called it a "Peach" diet when I explained it's low cal, low carb, low fat and "sufficient" protein. Talk about happy dance, I thought she was going to hug me.

The only thing that she pointed out is that in her experience people can suffer vitamin D deficiency on this diet, even with the recommended supplements, so she added it to the list of blood tests the diet people at the Wellness Center requested and wants to retest in March.

I love the scales at the hospital ... they weigh 1.6lbs less than the home ones. Maybe I'll turn up there in the mornings in my birthday suit and get on their scales.

Honestly I can't say exactly where I got them because I have been everywhere (here, pinterest, an IP P1 support group on FB even) so if you just google IP recipes, no telling where you may end up! A great deal of the time it will bring you right back here! AFA storing, I keep them in a tightly sealed plastic container in the fridge. A quick reheat in the microwave freshens them up. Still not sure how long they'll keep but at least one of these servings will be kept for a week to see if it is still fresh on day 7 (need to know for my roadtrip)!
  • Quote: Sounds like a fantastic p4 recipe! I wonder if leeks would sub for shallots to fit p1?
Absolutely. Even a white onion would work. No need to brown anything. Just cook until soft.
