Newbie in need of potluck recipe

  • Just found out I need to make a dish for women's brunch and I'm at a loss. I don't want to use my IP packets but I'm thinking a veggie tray may not go over well. They usually have a lot of fruit, breakfast bakes, oatmeal bakes, and sweets. I have to contribute but would like to be able to eat it as well. I usually take a bar with me and don't fix a plate and last time had to endure the woman next to me talk about how she lost 70 and didn't restrict anything from her diet. If anyone has a great crowd pleaser for me it would be greatly appreciated.
  • What about asparagus with toasted sesame seeds and olive oil drizzle. A friend just made this for me and she said it's her mom's brunch recipe that she serves cold (she uses sesame oil but I think it would be fine to replace with olive oil)
  • How about an omelet bake using eggs, spinach, mushrooms and peppers ? I bet Rainbow Smiles has a recipe....that thread was bumped recently.

    The sesame seeds wouldn't be compliant with IP Phase 1, unfortunately.

    If it's a breakfast or brunch, you could always make a big pan of scrambled eggs and bring tortillas and salsa for egg wraps - you can have the eggs as long as they aren't made with milk, and the salsa is fine. You could even make your own salsa or pico de gallo!

  • Cold cooked salmon pieces over the asparagus? Savory, protein and vegetable. Can't get any better than that.

    Or something like .. Golden Goddess Soup with loaves of crusty bread for them and premade Artisan Flatbread for you.
