Looking for easy lunch ideas

  • I'm having a hard time with ideas for lunch. Need easy things to pack for work lunch time.
  • I pretty much do a salad (Lettuce, tomato, cucumber to = 8 oz), with a can of tuna, or leftover chicken breast cut up with walden farms dressing. Boring. I know.
  • I'm not on MRC, but I tend to make one pot meals (soup, stew, chili, whatever fits into the meal plan) and freeze it in portion sizes. That way I can have a hot, filling, healthy meal with no prep. I just pull whatever meal I want to pack that morning from my freezer.
  • salad here, too. usually add either canned or grilled chicken breast to kale salad...love it, it's healthy, lost 20 pounds over the last few months.
  • Cottage cheese with cut up cukes and sliced fruit.

    haha! I was just glancing over things and initially read this as "cottage cheese with cupcake and sliced fruit" LOL! I want THAT Oh what the eyes will do to our brains and tummies....
  • Haha!! We need to find a high protein cupcake
    We are camping this weekend so I packed celery, romaine, mushrooms, cukes so I cut them up, chop the lettuce and put roast beef slices, turkey or left over sirloin or boiled eggs. Light zesty Italian dressing or ginger rice wine vinegarette. Or I'll prepare like an appetizer (veggie plate) to keep it interesting.
    One of my favorites is to sauté lean ground beef, garlic, green peppers, mushrooms, drain and add a small can of hot spicy rotel and serve over chopped lettuce. It's so good!
