So i want to start breakfast lunch and dinner threads where we share what we eat and discuss our ideas about it if inclined. Im just having breakfast now. The others will come later but i don't mind if someone else wants to get the lunch and dinner ones going first if you are at that point already.

    So....here's the lunch thread.
  • My lunch today was Bacon-Apple-Cheddar Broccoli Slaw . I added some barbecue chicken to it.

    This is so delish I've had it two days in a row. Plus, it is simple to make and is an entire meal in just one dish - veggies, fruit, and protein. This recipe is a keeper.

    Lunch today:
    Sardine sandwich on the run made with 1 piece wholegrain bread (lawsons), and half a can of King Oscars sardines. No butter.

    Salad later at home:
    1 tomato diced
    1/2 cup spinach leaves
    1/2 cup canned peas.
    Dressing: dijon mustard + 1tsp olive oil+ 1tsp red wine vinegar.
  • For lunch today I had lettuce wraps with tuna salad. I like this recipe because it uses cottage cheese in place of some of the mayo, so it has extra protein but is still rich and creamy. Also, a bunch of raw veggies - baby carrots, bell pepper strips, and cherry tomatoes. And some blueberries and kiwi.

    Such a light and lovely lunch to enjoy at the picnic table at work, outside in the sunshine.

    Mid morning - 1 banana
  • sandwich made with 1/2 can king oscar sardines
    1 piece wholegrain bread
    piece of coconut
    1 date
    1 mandarine
    1 banana earlier.
    piece of ricotta cheese.

  • I was out all day so took it with me.

    1 2 slice sandwich with 4 slices of aged cheddar cheese
    tomato
    cucumber
    not too much butter

    1 old apple
    1 cup grapes
    1 banana

    coffee
  • 6 Deviled Eggs
  • 1 2slice wholegrain sandwich with butter, about 35grams hot smoked salmon and 1 tomato
    1 apple later on
    Now i'm having 1 glass white wine before dinner.
  • Mac and Cheese
  • Yesterday I had lettuce wraps with Hawaiian Chicken Salad (chicken, ham, pineapple, celery, onion, nuts, with a mayo-ish dressing). Love that stuff! And some kiwi and blueberries.

    And right now for lunch I'm eating a Chicken Cordon Bleu Salad - artisan lettuce, veggies, chicken, ham, swiss, honey mustard dressing. Plus 1/2 apple with Peanut Butter Cookie Dough Hummus.
