Hi all, tired something new that I had to share!
I was looking through the recipes threads and found Rainbow's recipe (that woman is amazing!) for Cinnamon Streusel Cake.. I decided to make it myself (left out some of the toppings) and have to say the recipe is awesome. I make it in a large muffin tin so i get two good sized cakes. I treat them more as muffins and decided to cut on in half horizontally, toast it, and spray with I cant Believe its Not Butter for a yummy breakfast..OMG it tastes just like a spice muffin! It is so delicious I had to share, taking that muffin and toasting it with the butter made it awesome. I wrote the recipe below, it is almost identical to rainbows cake recipe.. you should also try her frosted version, it looks amazing!
1 Packet Crispy Cereal Crushed
Vanilla Pudding
cinnamon, nutmeg and pumpkin pie seasoning
1 packet splenda
1.5 tsp baking powder
6 tbsp egg whites whipped until frothy
Drop of WF maple syrup
a few pumps of Torani Sugar Free Pumpkin Pie syrup (optional)
1 tsp vanilla
3-4 tsp olive oil
Mix dry, in a separate bowl mix the wet. Add half of dry to wet and stir, then add in the rest of the dry and combine.
Bake for 12-14 minutes in a 350 degree oven.
You can top with a mixture of wf marshmallow, vanilla extract, and pumpkin pie spice or you can cut in half horizontally, toast the cut sides, and spray with I Cant Believe its Not butter for an awesome muffin treat..
I also have made it with chocolate pudding, adding in wf chocolate, and cinnamon which is insanely good and chocolatey!
Hope you enjoy this treat as much as I do! Now that it is getting cooler out and Dunkin Donuts is bringing out all the delicious pumkin muffin treats I needed to find a way to make one of my own!
