So I've seen lots of posts about beef jerky. Even seen some IP friendly homemade recipes. But, what is the best IP friendly cut of meat for jerky? Also, if anyone has any recipes for jerky that are IP friendly, please post.
I don't make jerky in a dehydrator, I use a smoker. Because of this, I can use skirt or flatiron steak trimmed of all visible fat. I brine it in water, soy sauce, pickling salt, garlic, cayenne....then dry it completely and rub with salt and ground pepper. Smoke for 8-14 hours depending on how thick the strips are.
If you make flattened/extruded jerky, it's not going to taste much like jerky unless you use Liquid Smoke....which I cannot recommend.
I've made it using hamburger and a jerky gun. I used the liquid smoke, and I thought it tasted pretty good. I searched online for lowcarb jerky recipes, and have tried a couple different ones. I don't make jerky very often, but it was really nice to pack with for a hike, and it's nice to mix things up every now and then.
