Romaine Lettuce??

  • I was told that romaine lettuce counted as a veggie by my coach. So does that mean I just need 2 cups for lunch and dinner? Or do I need to add some iceberg or something? Thanks in advance!!
  • I am not a huge veggie fan and I can only eat so much dill pickles lol. I was just wondering if anyone else has heard of this or does this?.

    So, my veggies come from other places, other than lettuce

  • I guess I will have to explore the world of veggies. I love pickles so maybe Ill love cucumbers. Also I am gonna try to use spinach as salad. I need some major inspiration for this veggie stuff :-\

    When I started IP I only liked five veggies on the list. I made it a goal to try something new every week. I have found I love most of them now as my tastes have changed. Most veggies taste great roasted!
  • x0x aprildawn -- I love rhubarb. It's barely a veggie! I found it in the frozen food section and microwave it with cinnamon and a touch of vanilla - about 2 min so it get mushy. It's like apple sauce.

    Also, give cauliflower a try. Grate it on a cheese grater and stir fry it with oil spices. You would never know it's cauliflower - more like fried rice. Or steam frozen cauliflower and blend with chicken stock and garlic for a mashed potato like an option.
  • i'm not much of a veggie person either. here are some things that helped me through it:
    • spinach blended in the wildberry yogurt smoothie
    • spinach blended with chocolate drink and espresso for breakfast
    • broccoli sauteed in evoo with garlic and red pepper flakes with the ip rotini for lunch
    • big salad of spinach and spring mix, topped with grilled chicken, with evoo/lemon juice/s+p for dressing
    • experiment with cauliflower recipes (mashed, breadsticks, rice, grits)
    • green beans sauteed in evoo and tony's

    One of the true wonders /wonderful lifestyle change of this protocol are the number of posters who report their tastes change.. In a healthy direction.....! Veggies they thought they did not care for.....and even like you.. Not a veggie fan at all, find by maintenance they DO like some! Don't be so sure you are a lost cause! You may surprise you!
  • I managed a cup of spinach and waldens farm for a salad. I will try mixing it in my shakes. I am a huge texture person and the spinach leaves are ok until almost chewed then I gag! I wish I didnt have this issue.
  • I too was told lettuce (iceburg) did not count as veggie, but could be eaten in addition if hungry. I have for the last month eaten all kinds of salad greens as my 2 cups lunch meal. Is this not correct??

  • Spinach is clearly on the select veggie list.
    Some coaches make up "house rules" that differ from the protocol. This sounds like one
