I am starting phase 3 on Sunday and am scared but excited! I was wondering for the carbs though I keep reading different things that say count your Net Carbs instead of Carbs. Which am I supposed to follow?

I count the total carbs minus the fiber.
The net carb listings often include deducting the sugar alcohols. But not all sugar alcohols are the same. Some of them can actually cause a higher insulin response. So to be safe, I just deduct the fiber.
