Yummy baked chimichangas

  • 8 oz cooked, shredded chicken, turkey or beef
    8 oz salsa
    16 oz fat free refried beans
    1 4&1/2 oz can of diced green chili peppers, drained
    3 TBSP finely diced green onions
    4 oz shredded reduced fat monterey jack cheese
    8 8-9 inch tortillas
    fat free sour cream
    salsa
    green onions

    1. In a lange skillet combine the meat, beans, salsa, chili peppers, and green onions. Cook and stir over medium heat till warm, mix in cheese.

    2. Meanwhile, wrap tortillas in foil and warm in 350 oven for 10 mins. Spoon about 1/2 cup of bean mixture into each tortilla, wrap each up.

    3. Place in a 13x9x2 baking dish. Bake, uncovered for 15-20 mins at 350, or until tortillas are crisp. Garnish with sour cream, salsa, or green onions.

    I like to keep some of these in the freezer for a quick lunch! Yum!

  • Loosinit, it doesn't say for certain, I just always assumed it to be for one chimichanga. Sorry I'm not positive on that.....
