Originally sat fat was vilified by marketing to sell Crisco, which we now know is WAY WORSE (hydrogenated oil). It wasn't any research that said sat fat was bad, just marketing. Lots of theories out there but most studies of sat fat are also tied with carbs (burgers, fries, chips, etc).
