  • Just thought I'd share some of my recipes that have really helped me through the last 22 weeks of Ideal Protein. Some are using IP products, some alternative, and others are just regular low carb recipes for Phase 1 meals.
  • Big Mac in a Bowl



    Big Mac in a Bowl
    Ingredients:
    16 ounces ground beef
    6 cups Romaine lettuce
    1/4 cup red onion, diced
    2 dill pickle spears chopped
    1/2 cup tomatoes chopped
    Thousand Island Dressing (Walden Farms)
    Salt & Pepper to taste

    Instructions:
    Brown ground beef until cooked through.
    Chop Romaine lettuce into individual bowls.
    Chop red onion, pickles, and tomatoes and set aside.
    Pour Thousand Island Dressing on the lettuce as you desire.
    Mix the lettuce and dressing until evenly coated.
    Add ground beef and chopped vegetables to the lettuce and dressing and mix until even coated.
    Salt & Pepper to taste.

  • IP Broccoli Cheese Soup



    IP Broccoli Cheese Soup
    Ingredients:
    Ideal Protein Broccoli Cheese Soup packet (or alternative Broccoli Soup pack)
    1 tsp olive oil
    1.25 cups chopped fresh broccoli (frozen is okay if thawed)
    1/2 cup chopped mushrooms
    1/4 cup chopped celery
    1/2 tsp minced garlic
    2 tsp green onions
    Celtic Sea Salt and Pepper to taste

    Instructions:
    Preheat medium pot on medium heat and add olive oil.
    Sautee mushrooms, celery, and garlic until tender.
    Add chopped broccoli and put a lid on the pot to steam the broccoli.
    Prepare the Ideal Protein Broccoli Cheese Soup packet according to the directions and add to the pot of vegetables.
    When completely heated you can eat as is or put in a blender (or use immersion blender) to blend everything together to be only slightly chunky.
    Top off with green onions.

  • Cabbage Vegetable Soup



    Cabbage Vegetable Soup
    Ingredients:
    2 tbsp olive oil
    1 tbsp garlic, minced
    3 celery stalks chopped
    1 small yellow onion chopped
    1 green bell pepper chopped
    16 oz baby bella mushrooms, chopped
    6 small zucchinis, chopped
    2 small heads of cabbage (or 1 very large head)
    16.5 oz fire roasted diced tomatoes
    32 oz chicken broth
    2 cups of water
    1 tsp red pepper flakes
    1 tbsp Italian seasonings
    2 bay leaves
    Sea salt
    Black Pepper

    Instructions:
    Heat oil in large stock pot.
    Lightly brown garlic in oil.
    Add celery and onions and cook until tender.
    Add mushrooms and bell pepper and remaining vegetables, chicken broth, and water.
    Bring stock pot of vegetables to a boil, stirring until completely mixed. Liquid should cover all vegetables and be soupy. This is a very forgiving recipe so if you need to add more liquid, add more chicken stock and water to your desired "soupiness".
    Mix in all of the seasonings and bay leaves and let simmer on low with a lid on the pot for about 2-3 hours. The longer it sits the better.
    Season to taste if you need to add more spice to your soup.

  • Chocolate Zucchini Cookies



    Chocolate Zucchini Cookies
    Ingredients:
    Ideal Protein Crispy Cereal
    Ideal Protein Chocolate Drink Mix
    2 egg whites
    1 tsp baking powder
    1.5 tsp coconut oil
    2 tsp Torani Sugar Free White Chocolate Syrup or 1 pack of Splenda or Stevia
    Dash of cinammon
    Dash of Sea Salt
    1 tsp vanilla extract
    2 cups shredded Zucchini

    Instructions:
    Preheat oven to 350.
    Using a rolling pin, gently crush the Ideal Protein Crispy Cereal while still in the unopened package.
    Mix all ingredients together except for zucchini until thoroughly mixed.
    Then add shredded zucchini (blotted dry with a paper towel) and incorporate into chocolate mixture.
    Spray your non-stick Whoopie pie pan or a muffin pan with a non-stick spray and then evenly add your chocolate mix to make 12 cookies.
    Place in oven for 12-15 minutes and then let cool in pan.

  • Mocha Frappuccino Ideal Protein Style



    Mocha Frappuccino Ideal Protein Style
    Ingredients:
    Ideal Protein Chocolate Drink Mix
    2 shots espresso
    4 oz water
    2 cups of raw spinach
    Pinch of salt
    Dash of cinnamon
    Optional Walden Farms Chocolate Syrup
    Ice

    Instructions:
    Blend in your Vita Mixer (or other high speed blender) the chocolate drink mix, espresso, and water on low speed. Add spinach, salt, cinnamon and optional Walden Farms Chocolate Syrup and blend until completed smooth. Add ice, blend, and pour into your favorite cup. Enjoy!

  • Ideal Protein Mushroom Soup



    Ideal Protein Mushroom Soup
    Ingredients:
    Ideal Protein Mushroom Soup mix
    2 stalks chopped celery
    Sliced baby portabella mushrooms
    1/2 tsp minced garlic
    Chopped Green Onions
    Sage
    Black pepper
    Sea Salt
    Olive oil

    Instructions:
    I make my recipes to taste so they don't always come out the same. In this case, chop celery and add to measuring cup. Slice mushrooms until it fills up the rest of the measuring cup to make 2 cups of vegetables.

    Sautee the celery, mushrooms, and garlic in olive oil on a medium heat until celery is tender. Mix Ideal Protein Mushroom Soup mix according to package and pour into sauteed vegetables. Add sage, black pepper, and sea salt to taste. Continue heating slowly until the soup is hot.

    Pour into your soup bowl and sprinkle with green onions.

  • Rhubarb Crisp



    Rhubarb Crisp
    Ingredients:
    6 cups frozen rhubarb
    2 tsp cinnamon
    3 tsp pure vanilla
    13 packs of Stevia in the Raw
    dash of salt
    Ideal Protein Maple Oatmeal (or alternative Oatmeal pack)
    1 oz of water
    I Can't Believe It's Not Butter spray

    Instructions:
    Heat medium size pot on medium heat.
    Add frozen rhubarb to pot and cook until tender stirring frequently.
    Add cinnamon, vanilla, salt while cooking.
    Add Stevia in the Raw when the mixture is about done cooking and stir completely.
    Preheat oven to 400 degrees Fahrenheit.
    Spoon 2/3 cup of Rhubarb compote into single mini pie dish.
    Mix 1 pack of Ideal Protein Maple Oatmeal with 1 oz of water and stir with a fork to barely wet.
    Crumble the oatmeal mixture over the Rhubarb compote and spritz with I Can't Believe It's Not Butter spray so it can brown.
    Cook in the oven for 20-30 minutes until top is browned and bubbling.
    Allow to sit for about 10 minutes before eating.

  • Vanilla Protein Drink Latte



    Vanilla Protein Drink Latte
    Ingredients:
    Vanilla ready made shake
    2 shots espresso
    Dash cinnamon

    Instructions:
    Prepare 2 shots of espresso and dump into a large mug.
    Pour the vanilla ready made shake into your steaming pitcher and steam until hot and just bubbling.
    Pour the steamed vanilla ready made shake into the mug with your 2 shots of espresso.
    Sprinkle cinnamon on top.

  • Vegetable Omelet



    Vegetable Omelet
    Ingredients:
    Drizzle of olive oil
    Two cups of any vegetables of your choosing
    I used asparagus, spinach, mushrooms, celery
    Ideal Protein or alternative food omelet mix
    Water
    Spices - Cilantro, salt & pepper, oregano
    Green onions
    Tabasco

    Instructions:
    Chop vegetables and set aside.
    Heat omelet pan on medium heat and add a drizzle of olive oil.
    Add chopped vegetables to omelet pan and cook until tender stirring often. Put the lid on top of the pan to keep moisture in which will steam the vegetables and you'll use less oil.
    Shake your omelet mix with water per instructions and add to omelet pan.
    Sprinkle any seasonings on top of the mixture. I used salt and pepper, oregano, and cilantro.
    Cook until cooked through the middle then plate.
    Add onions and Tabasco to the top of your plated omelet.

  • Shepherd's Pie with Mashed Cauliflower



    Shepherd's Pie with Mashed Cauliflower
    Ingredients:
    16 oz of ground beef (or turkey or chicken)
    5-7 baby portabella mushrooms chopped
    1/2 medium sized red bell pepper chopped
    1/4 cup of dice red onions
    16 oz bag of frozen cauliflower
    1/4 cup chicken broth
    3 tsp garlic minced
    1 tsp fresh rosemary
    1 tsp fresh thyme
    1 tsp cumin
    3/4 cup beef broth
    1/8-1/2 tsp of Xanthan gum
    salt and pepper

    Instructions:
    Preheat oven to 350 degrees.
    Brown ground beef on medium setting until cooked through.
    While ground beef is browning, chop all vegetables.
    Heat up bag of frozen cauliflower in microwave until steaming and cooked through.
    Add to Vita Mix blender or food processor and add chicken broth and 1 tsp garlic.
    Blend until smooth.
    Transfer ground beef to side dish then add vegetables, herbs, and 1/2 of beef broth to the same pan.
    Stir and pick up any brown bits on the bottom of the pan and saute vegetables and tender.
    Add back ground beef and remaining beef broth to the pan of sauteed vegetables and stir.
    Add a small amount of Xanthan gum at a time and mix throughout to thicken the beef broth like a then gravy.
    Transfer meat and vegetable mix to your baking dish(es) and then spread on mashed cauliflower until evenly coated.
    Place in the oven for 20-30 minutes until bubbly on the sides.
    Remove from the oven and let it rest for about 5 minutes before serving.
