  • Mmmm....that stuffed mushroom recipe I posted the other day would be an excellent holiday appetizer!
  • I am making Kalyn's Broccoli Gratin for the first time, acorn squash stuffed with apple pie filling, and crockpot roasted brussels sprouts with horseradish so there are lots of sides I can eat
  • I'm thinking of making baked acorn squash stuffed with a savory mix of quinoa, mushrooms, onions, cranberrries, & feta cheese for the vegetarians in my family while the others feast on turkey & stuffing. I make a wicked sweet potato souffle with agave, too, that everyone looks forward to.

  • Cyndi could you share the acorn squash apple pie filling recipe. That sounds like heaven to me. I love both!
  • I don't really have a recipe. I just cut the squash in half, make an apple pie filling, stuff and bake until the squash is soft. Overfill the squash because the apples will shrink as they bake. I'm going to add cranberries for the holiday, would also add pecans if my daughter didn't have a nut allergy.
