IP unrestricted Nachos

  • Hey guys! Have you tried my nachos yet? I only mentioned them once so if you didn't see my comment, here is the recipe.

    Take the IP potato puree and add water. I never measure this. I stir it until it is runny enough to cover the frying pan easily. Cook like a pancake. This is the basic tortilla recipe (I can't remember where it's from...)

    Then cut into wedges. Spray butter PAM on both sides and cook in a 400 degree oven. Flip over after 10 minutes and cook for another 5 minutes. These, of course, according to MY oven...

    Eat with salsa. OMG! I've died and gone to heaven!!!

    I found this one - whaddya think for it being "legal" enough?

    President's Choice Guacamole Seasoning Mix (no avocado in it -- you can ADD it to avocado if you're not on IP)

    LOOKS very Salsa-y
    1 1/2 tsp cal 4, fat 0, carbs 1g, not significant fibre or sugar to record

    That's not a lot of salsa, but better than the traditional salsa I have in my cupboard that has 6g carbs per tsp

  • Yes I have made these a lot since you posted. I made my own salsa when we had to take all the tomatoes left in the garden in when there was a threat of frost.
    I was so glad you had posted your recipe for the "chips".

    I am very happy you enjoyed it! I missed them this week because I didn't get enough potato puree packets. I see my coach every 2 weeks and I didn't plan enough. Needless to say I am having them tomorrow for lunch. Excellent!!!

    Yes they do get crisp once you put them in the oven. But eat them right away because they tend to soften after a while...
