Polenta

  • So, I recently discovered polenta and I'm obsessed!!! It's extra yummy, low in calories/fat, and my mind is going crazy thinking of all the potential ways to eat it.

    Anyone have any good recipes to either make homemade polenta or recipes that use polenta in them?
  • Baked Polenta with Mushrooms -
    6 cups Polenta, cooked
    1 each Garlic clove, quartered
    2 tablespoons Olive oil
    1 pounds Mushrooms, sliced
    2 tablespoons Basil, chopped
    1 pinch Dried red pepper flakes
    Salt & pepper


    Preheat oven to 350F.

    Spoon polenta into an oiled 8" X 12" baking dish & set aside.

    Saute garlic in olive oil over medium-low heat until garlic begins to brown. About 5 minutes. Remove garlic with a slotted spoon & discard. Add mushrooms & saute in flavoured oil until they soften.

    They will only need 5 minutes or so. Stir in the basil, red pepper, salt & pepper. Spread evenly over prepared polenta & bake for 15 minutes. Serve hot.

  • Mollewogg, where are you getting your calorie information ? I think polenta is quite high in calories, my information shows 1/2 cup = 255 calories.

    Bargoo the kind I bought says 2 1/2 inch slices are 70 calories. This is the shelf-stable stuff, not the soft kind. I guess it could add up, but if you are using it as a side 70 calories is not bad.

    I think that's half a cup of dry polenta.

    When I make it, I use 1 cup of polenta with 4 cups of liquid, so each serving (4 total) would be about 125 calories. and would be a quite a big volume.

    one of our favorites to pour over it is spinach, tomato and onion sauteed in garlic and olive oil and a little lemon juice.
