I looked to find a bar for you, and ended up at the Think Thin site (seemed too high in carbs). It said that their bars (the set I was looking at) are certified gluten free. Yet, their bars contained maltitol (a sugar alcohol, from malt?).
Is malt a sensitivity for all those that need to stay glutenfree?
Malt contains gluten, but almost all maltitol is made from corn. So if IP certifies it gluten free, then they are using corn based maltitol. Even if it were made from wheat, I've heard that it's so highly processed that no trace of gluten remains. I'm gluten sensitive, and still have a lot to learn about it.
