Nothing beats beets

  • I am currently obsessed with pickled beets, and probably eat 3-4 cans a week in salads.

    I know beets are a veggie and that's great, but does the fact they are pickled create any kind of problem? I'm not sure why I think it might but food preparation can always make a difference, so I thought I'd ask in case someone knows!

  • That's also for the old plan. Pickled beets contain lots of sugar. Compare the nuts with a can of plain beets. You could make your own using a sugar substitute, vinegar and spices and have 0 points.

  • My mom used to pickle her own eggs. Just be warned the smell of the stuff can get pretty strong
  • do NOT substitute for the sugar!

    you have to be careful when pickling stuff - using artificial stuff can have a serious effect:

    "Some sugar substitutes are not approved to use in canning because they are not stable once heated. Those would be NutraSweet, Equal, and Saccharine. Also Truvia, a by product of Stevia is not shelf save either. "

    "Sweetened pickles and relishes using sugar substitutes such as Stevia and Splenda will work but may add a mushy texture and have a strange aftertaste. You can use honey for your pickling but use 3/4 cup of honey for every cup of sugar. For sweet pickles use a dark honey rather than light. "

    me, i'd just work them into my diet: 1 cup of pickled beets, sliced, is 106cal according to fitday. i love pickled beets but 1c is probably way more than i'd want to eat at a sitting.
  • I think I'll just count the points properly for them for now, rather than trying to make my own. I love them in salads. They really are one of the only things that make me eat salads lol

  • wow. i can't stand beets. can't even begin to imagine them pickled. however at one of my ww meetings the leader suggested we try golden beets. they are hard to find but i'm determined to give them a whirl. have you ever tried those?

  • I could eat beets for every meal! I just found beet straws for my salad Fresh beets are the best but it looks like i committed murder on my hands after cutting and peeling them lol!!
