    Anyone else love DC cupcakes and Cake Boss? (Cures my cravings, hahaha) I was watching DC cupcakes and wanted to make something WW friendly and found all of these lovely low calorie (probably acceptable for most diets/lifestyle changes, they are extremely simple and not any fattening/calorie filled) frosting recipes.
    Does anyone have any other recipes for cupcakes (actual batter) or frosting?
    I'd love to have any. Really craving some sweets and obviously don't want to go out and buy cupcakes.

    If anyone makes these, let us know how they turn out. I plan on making some tomorrow, I'll post photos if I get a chance and let you know how they turn out.
  • I have yet to try low fat cupcake recipes, but I did see a link to a carrot cake off of your link. http://lowcalorieideas.com/2010/03/l...t-cake-recipe/ Im going to try and make this probably next week in cupcake form with cool whip topping. Ill let you know how it goes once I make them.
  • i love cupcakes and just cake in general. I find chocolate cake to be one of the most delicious foods.
  • You can make cupcakes with diet soda by just mixing in a can of soda with the cake mix. Someone has also said you can use club soda/seltzer water... which I should try soon since I have a box of cake mix laying around. I'll try the cool whip/pudding frosting from your link too!
  • thanks for posting this! I've been looking into making low calorie/healthier treats since my birthday is coming up (yes I'm going to be making my own birthday cake, lol).

    I made a batch of cake mix cookies for my fiance and my brother using applesauce instead of oil. It was more difficult for me to roll the cookies out, but they said the cookies tasted better! I agreed, they had a much more chocolatey flavor

    I used sugar free vanilla cake mix and angel food and figured it up to about 110 calories per "cake".

    I also made my own cream cheese icing by mixing some sugar free pudding mix, tablspoon of FF cream cheese, Truvia or any artificial sweetener.

    I let my cake cool, the dump it out of the mug, then sliced in half, put the icing between the two and made a little whoopie pie cake!

  • I wonder if there is a noticeable difference if you substituted a brownie mix for the cake mix. More fudge taste but also more caleries??? I like the idea of using Apple sause along with the water

    The way I figured out the calories (which you could do using the brownies) is sit a bowl or large ziploc bag on a food scale then calibrate to zero. Add in the two boxes of mix and record the total weight of the two mixes.Add up the amount of calories in each box total (dry mix only not prepared obviously). Record that number. Divide the total calories by the number of ounces in the mix (to figure the amount of calories per ounce) then weigh three tablspoons of the mix and multiply that by the amount of calories per ounce. Make sense? I think thats right...
  • AHH YES. I feel like I need a math degree sometimes when I am calibrating my recipe calories.
  • Since I have a hard time eating carbs without any protein, I modified the recipe a little and it's a little denser and I think pretty good.

    2 T of reg cake/angel food cake mix
    1/2 scoop protein powder
    1 T cocoa powder
    2 T water

    Mix in mug or bowl and microwave 1 minute. I put a scoop of fruit spread in the middle before microwaving - it was 20 additional calories of cherry jam, but so good. Without the jam, it's 166. A little more complicated, but still not too complicated...

    I'm going to try it without the protein powder next and see if it'll work for a quick treat for the kiddos.

    Oh yes, I edited my post 3-4 times because I kept figuring it out wrong.
  • Skinnytaste Desserts look great. The cheesecakes are all delicious, but the rest of the recipes look awesome too!
