I tried some new recipes ...thought I'd share!

  • I like to try at leas 2 new recipes a week ...if they're good (keepers), I like to share! Hope you like them as well as I do.

    Loosinit

    PINEAPPLE CHICKEN ROLL-UPS

    1 - 8 ounce package Philadelphia fat-free cream cheese
    1 cup crushed pineapple, packed in it's own juice, drained
    1/4 cup dry roasted peanuts or almonds (chopped)
    1 cup cooked, chopped chicken
    1/4 cup chopped celery
    4 (6 inch) flour tortillas
    shredded lettuce
    seasoning of your choice (I used lemon pepper and Emril's seasoning)

    In bowl, stir cream cheese with spoon until soft. Add pineapple. Stir in chicken, celery and nuts. Mix gently. Season as you'd like. For each rollup, spread about 1/2 c. chicken mixture on a tortilla. Top with shredded lettuce Roll up and place on plate, seam side down. Serve at once, or wrap and refrigerate until ready to serve.

    Each serving equals: 283 calories; 7 grams fat; 1 gram fiber


    DELI CRAB SALAD

    6 ounces imitation crab meat (diced)
    2 Tbsp. light Mayonnaise (I used Trader Joe's Lemon Mayonaise)
    1 medium chopped tomato
    chopped green onion or chives
    1/2 - 1 tsp mustard (spicy, or hot ...or whatever you prefer)
    1/4 cup fat free sour cream
    1/4 small onion (chopped)
    salt and pepper to taste
    1 cup cooked macaroni noodles (I used whole wheat)

    Measure out 1 cup cooked, cooled macaroni. Mix the diced crab with the rest of the ingredients. Stir well. Chill for a few hours or overnight.

    2 large servings

    NOTE: You can also add chopped celery, pimento, or chopped dill pickles.

    DIET 7-UP CAKE

    1 box yellow cake mix (no pudding)
    12 oz bag frozen raspberries
    12 oz bag frozen blueberries
    (or use frozen fruit of your choice ...I used 2 bags of blackberries ...Trader Joe's)
    1/3 cup Splenda (or to taste)
    3 Tbsp. flour
    1 can diet 7-Up or any other diet lemon lime soda

    Heat oven to 350*. Toss frozen berries with Splenda and flour. Put berries in bottom of 9X13 Pam sprayed cake pan. Mix cake mix with soda. Pour over berries. Cover and bake for 20 minutes. Uncover and bake another 20-30 minutes until cake is browned and berries bubbling.

    Serves 12

    Note: I used a lemon flavored cake mix and baked it uncovered at 325* (because the berries were frozen, and I wanted to make sure they cooked) ...I kept checking for 'browness', and it took about 40-45 minutes to be bubbling and browned ...It was yummy!

    CARROT CAKE WITH CREAM CHEESE FROSTING

    1 boxed carrot cake mix
    1 - 16 ounce can pumpkin
    1/2 cup water

    Mix together (batter will be stiff). Pour into Pam sprayed 9X13" pan. Bake according to package directions. Cool.

    Frosting:

    1 package (8 ounce) fat free cream cheese
    3/4 cup powdered sugar (or you could use Splenda)
    1 cup fat free cool Whip

    Mix together, using wooden spoon. Spread on cooled cake.

    Makes 12 servings

  • I've never heard of the 7-up cake but I'm really anxious to try it! Can you tell us what it tastes like?
  • The one that I made was like a blackberry cobbler! The cake is very light. Really good!

    The cake is fabulous! I just loved it. I used strawberries & blueberries (because they are my favorite) and it was a very nice dessert. Shared it with my co-workers (who are all watching points), & it's nice to know we can still EAT OUR CAKE TOO!!

  • Ok I apologize if this is a stupid question...but I'm planning on making the cake, do you mix simply the cake mix with the soda, or do you add the eggs, oil as well to the mix as instructed on the box? Thanks!

    Just add the can of soda to the cake mix ...nothing else.

  • Oh those recipes sound wonderful! (I'm always on the lookout for new meals that won't break the budget )
