I am so frustrated. I have tried multiple veggie burger recipes, all of which claim to be the holy grail of veggie burgers and when I make them they end up being mushy in the middle. They are edible, but I don't know where I am going wrong. I feel like I end up adding too much flour in aswell. Does anyone have a good veggie burger recipe? :
Are you possibly making them too thick? I know veggie burgers have a different look to them when there cooked and it can be hard to tell as well.
Black Bean Burgers
One Can Black Beans (drain And Smash W/ Fork)
1/2 C. Frozen Corn
1/2 Green Pepper (dice)
1/2 Small Onion (dice)
2 Egg Whites
1 Tsp. Cumin
1 Tsp. Chili Powder (i Also Use A Tsp Of Red Pepper)
1. Tbls. Water.
1/2 C. Bread Crumbs
Mix First Ingredients. In Seperate Bowl Mix Egg Whites W/ Spices. Add To First Bowl, Mix In Bread Crumbs And Shape Into Four Patties. Fry In Tiny Bit Of Oil.

Are you making them vegetarian or vegan? There's a world of difference in the texture of a vegetarian and vegan burger.
Well the ones I made last night were vegan. Actually, I think every one I have ever made has been vegan. Does a vegetarian veggie burger include egg generally?
A vegan burger would not include an egg or any animal products.
A vegetarian burger could include eggs, cheese and milk.
Here are a few I like to make.
Meatless Mushroom Burgers
2 c. mushrooms, finely chopped
2 eggs
1/4 to 1/2 c. seasoned bread crumbs
1/2 c. Cheddar cheese, grated
Onions, if desired
Mix all ingredients and form into patties. Fry in butter until lightly browned. Serve on a bulky roll plain or topped with a cheese sauce.
Easy Veggie Hamburgers
2 cups oatmeal, uncooked
1-1/2 cups bread crumbs
1/2 cup grated cheddar cheese (optional)
1 medium onion, chopped
1 tsp. salt or 1/2 tsp. garlic salt and 1/2 tsp. seasoning salt
2 tsp. savoury or any herb to taste
1 can mushroom soup or can use milk to moisten
2 eggs (or 4 egg whites)
Mix all ingredients together. Fry in small amount of oil, keeping patties flat. Fry slowly on low heat. Serve on hamburger buns with your favourite condiments. These burgers are also delicious served as a cold sandwich with salad dressing, lettuce, tomato, and cheese slices.
Double Mushroom Burgers: Add 1 can of drained mushrooms to the ingredients and serve as usual or serve as patties in your favourite sauce.
And this is a vegan recipe that turns out pretty good. You really need to have them thin.
Veggie Burgers
(Excellent burger made without eggs.)
1 1/2 cups vegeburger (or TVP soaked)
1/3 cup cooked oatmeal
4 tablespoons onions, chopped
1/2 medium potato, grated
1/2 teaspoon salt
1 teaspoon savory (or 1/4 teaspoon sage)
1 tablespoon soy sauce
1/4 cup whole wheat bread crumbs
Mix above ingredients. Spray skillet with Pam. Form into small patties and fry until nicely browned on both sides. Or, may bake on oiled cookie sheet in 375 degree oven. Serve in place of hamburger on buns with lettuce and tomato.
regarding veggie burgers. can you bake them instead of frying? I have been thinking about venturing into the world of veggie burgers lately and was wondering about just baking them in the oven instead of frying them.

You can definitely bake them. Add a tiny bit of water to the baking sheet/dish and put a cover over it to steam it if it gets too dry. Also, why not fry it? You can use just light mist of cooking spray in a skillet and it works fine. In the past, we have actually cooked them on the grll too with excellent results. If you are making them from scratch, you might want to use some foil on the gill so they don't fall through. For whatever reason, a lot of the homemade ones crumble more easily than the commercial kind. I LOVE veggie burgers with avocado and a thin slice of onion. YUM!

Thank you angleskeep. I would like to make a batch, and freeze them for future dinners or lunches. I like avocado and mustard on mine.
