The Vegan Beach

  • Just wondering if any of you out there are vegan and on the Beach?

    I've recently begun contemplating veganism -- or at least dramatically reducing my my animal product intake if not eliminating it. In a lot of ways, I think the South Beach Diet would integrate quite nicely, but I'm curious: have you found you've needed to modify the SBD principles to make it work? I'm particularly curious about increasing your limit on nuts and grain intake. Many of the recipes I'm finding centre around grains (albeit whole grains), and use sauces made from cashews and/or nut butters that would certainly send me over the daily "limit".

    I've also contemplated it, and earlier this fall drastically reduced my animal protein intake. I think your best bet is to replace animal proteins with tofu (limit your consumption to one serving a day, and avoid processed soy products like soy cheese and yogurt. You should eat plain tofu, edamame, or soy nuts) and beans, and grains with protein like farro and quinoa. You can have nut milks and hemp milk, but I wouldn't overload with actual nuts or up your grains all that much. You'll need to increase your veggie and fruit consumption to help fill the gap too.
