Veggie Jambalaya

  • This is a yummy recipe and it reheats really well! Remember, it's jambalaya and you can throw about anything in there. The original recipe called for turkey sausage and shrimp. I substituted carrots and veggie sausage and ti don't miss a thing!

    You will need:
    2 tbsp olive oil
    1 large onion, diced
    2 cloves of garlic, minced
    2 stalks of celery, diced
    1 green bell pepper, seeded and diced
    1 red bell pepper, seeded and diced
    1 cup diced carrots
    1 package Morning Star Farms Veggie Italian Style Sausage
    1 tbsp chili powder
    2 tsp dried thyme
    ½ tsp cayenne pepper
    1 tsp salt
    1 ½ cups uncooked brown rice
    14-oz can diced tomatoes, drained
    6 cups vegetable broth

    Heat oil in a large pot over medium-high heat. Add onion, garlic, celery, peppers and carrots and cook, stirring until onion is soft and translucent (about 5 minutes). Add veggie sausage, chili powder, thyme, cayenne and salt. Stir to combine and cook for about 1 minute. Add tomatoes, broth and rice. Bring mixture to a simmer, reduce heat to low, cover and cook until rice is tender, stirring occasionally, about 45 minutes.

    Makes about 6 servings
    Serving =1 ½ cup
