Does anyone have a stuffed pepper recipe?

  • We were given a ton of green peppers and the kids want stuffed peppers for dinner tomorrow.

    Anyone know of a stuffed pepper recipe that is phase 1 friendly?

    6 green peppers (there were kind of large) cut in half and stemmed and seeded. 13x9 in pan with a little bit of Olive Oil rubbed in the bottom. Rub the peppers inside and out with a little Olive Oil and sprinke with Sea Salt. Take a package of ground turkey (I used the kind I get at Costco) and add 1 egg white, 1 tsp Sea Salt, 3 tsp Mrs. Dash - I used the Costco Brand, and 3 TBL Heinz 1 carb ketchup. Stuff the peppers then drizzle with a little bit more olive oil and sprinkle with a little bit more salt. Bake at 400 degrees 45 minutes uncovered. Check to make sure the center gets to 165 degrees before taking out of oven. Everything gets nice and brown and stays very moist! It is like meatloaf in a pepper! My whole family liked it... I served it with a romaine salad and brown rice (for the growing kiddos).

    This equals your 2 cups of veggies and your 5 oz of protein for dinner.

    5oz extra lean ground turkey
    1 bell pepper, seeded and halved
    1/4c leeks, diced
    1/4c celery, diced
    1/4c tomato, diced
    1/4c zucchini, diced
    1 tbsp low carb sugar free ketchup
    dash of smoked tobasco
    seasoings to taste
    1 oz part skim mozzarella

    Directions:
    Stem pepper for 10 minutes
    Saute all diced veggies until soft, remove from pan and cook turkey through, add seasonings to taste and add vegetables back into mixture.
    Add ketchup and tobasco. Remove from heat and stuff into peppers.

    Cook in 350 degree oven until cheese is golden brown. Serve hot



    You can change up the recipe using different meats:

    ground turkey
    ground chicken
    ground beef
    ground pork

    and different seasonings:

    italian: oregano, garlic & onion powder with 1 oz mozza & parm cheese
    greek: oregano, garlic, cinnamon & nutmeg with 1 oz feta cheese
    asian: chinese five spice, garlic powder & ginger

    * 6 medium zucchini
    * 3 tsp olive oil
    * 1/2 cup chopped onion
    * 3 cloves garlic, minced
    * 1/2 cup chopped mushrooms
    * 1 tsp vinegar
    * 1 lb ground turkey
    * 2 diced tomatoes
    * 3 tbsp chopped fresh basil
    * 1 tbsp chopped fresh rosemary
    * 1 egg, lightly beaten
    * 2 tsp sea salt & pepper

    Directions:


    * Cut zucchini lengthwise into half. Scoop out insides, leaving shells about 1/4 inch thick. Reserve about half of the insides.

    *Heat 2 Tsp of olive oil in a skillet on medium high heat. Sauté onion and garlic until soft.

    *Add mushrooms and reserved zucchini insides, and sauté another 2 minutes.

    *In a separate skillet heat a Tsp of olive oil on medium high heat.

    *Add the ground turkey. Lightly brown the turkey on both sides about 6 minutes.

    *Stir in the onion and mushroom mixture from the other pan. Add the wine.

    *Stir in tomato, basil and rosemary and cook 1 minute longer. Drain any excess fat. Remove mixture from heat and set it aside.

    *When mixture has cooled, add egg, salt and pepper. Fill zucchini shells with mixture.

    *Fill a baking pan with 1/4 inch of water. Place filled zucchini halves in pan and bake at 375 degrees for 40 minutes, until golden brown.

    *Remove zucchini from pan and serve while hot.
  • I thought I would miss the rice and cheese that is normally in this low calorie dish, but I didn't. Make sure your pepper are closer to extra large than large. This recipe will give you 5.3 ounces of meat and 2 cups of veggies. If you happen to have extra meat mixture, save while baking the peppers and serve alongside the peppers. I sometimes have to do this if my peppers are on the smaller side. This meal is extremely filling and satisfying.


    3 large red bell peppers (emphasis on large)
    1 pound ground turkey
    2 tablespoon extra virgin olive oil
    1/3 cup red onion
    5 cloves garlic, chopped
    1/2 teaspoon real salt
    1/4 teaspoon pepper
    1 teaspoon oregano
    1 14.5 ounce can of diced tomato-lowest sugar content you can find
    1/2 cup water
    2 cups of grated cauliflower (about 3/4 of a head) grate it COLD and uncooked
    1 teaspoon worcestershire sauce
    Cheddar cheese slices (for family members not on IP.


    1. Cut tops off peppers; remove seeds and membrane

    2. Sprinkle the inside of the peppers (lightly) with salt

    3. Preheat oven to 350. Heat olive oil in a large skillet over medium heat

    4. Add onions & garlic; cook, stirring often, until soft & translucent (about 5 min). Don't let it caramelize

    5. Add meat; mash it all up and cook until lightly browned/no pink

    6. Add grated cauliflower, salt, pepper, tomatoes, water, rice, oregano and Worcestershire sauce

    7. Simmer for 3-5 minutes.

    8. Stuff peppers and add slice of cheese on top of non-ip family members (if desired)

    9. Stand peppers in a baking dish or cookie sheet with sides

    10 Bake uncovered for 25-30 minutes
