Looking for Salad Ideas

  • There are only so many green salads I can eat with vinegarette dressing before I start to get COMPLETELY BORED! Can you all offer some other tasty and easy ideas? The other salad I make myself occassionally is tomato, cucumber and red onion in balsamic vinegar and a dash of olive oil. Any ideas would be greatly appreciated!

  • Italian Pasta Salad
    Salad:
    3 cups cooked spiral macaroni
    3/4 cup tomato chopped
    2/3 cup cucumber chopped1/2 cup chopped bell pepper
    1/3 cup green onions
    1/3 cup chopped ripe olives

    Toss all ingredients. Cover and chill for about 30 minutes.

    Dressing:
    1/4 cup rice wine vinegar
    2 tablespoons water
    2 tablespoons olive or vegetable oil (I prefer peanut oil)
    1/2 teaspoon salt
    1/2 teaspoon sesame oil
    1 clove garlic, finely chopped

    Stir all ingredients until thourghly blended

    This makes 6 servings
