All vegetables have carbs in it. They're just very low. Cauliflower is low enough that it's not on the "occasional veggies" list, so enjoy.
Cauliflower is a magic vegetable for me, I LOVE it (I HATED it before IP

). I boil it, then blend it with a little water, garlic powder, minced onions, and oregano to make "mashed potatoes." I also shred it with a cheese grater and stir fry it with soy sauce to make "rice." I cut it up into small pieces, boil it, and use it as a filler instead of bread when I make meatloaf. Cauliflower is in my fridge at all times!!
