So I know I sound picky, but I really don't like turkey or fish... or eggs. I've been living off grilled chicken for every meal and I'm getting tired of the same ol' things! Any ideas for how to spruce it up??
I didn't think that I was a fan of fish also, but if I bake a piece of tilapia with lots of seasonings, lemon juice, and ICBINB spray, it's actually pleasant and a change...
Anywho, that's not what you asked.
Are you just eating plain chicken breast? I was over chicken too a week or so ago. So, instead of having it plain, I made chicken fajitas two nights and they were really YUMMY!
You could also use lemon pepper seasoning for one meal, maybe try some barbecue spices for another meal.
I posted an Italian Chicken recipe in the recipe thread. It's a crock pot recipe but I've been baking it and it's really good.
I also skillet "fry" chicken - just a different taste than grilled. And there is also an awesome Ranch Chicken Fingers recipe in that thread, too.
Good luck! And fish isn't too bad - like Cod or Tilapia - I'm not a fish person and can't stand salmon or anything really fishy. But Cod & Tilapia are mild and don't really have that fishy taste.
Also - with turkey. You can add low sodium taco seasoning and make "taco" turkey. I use the White Turkey & not Ground Turkey. Turns out pretty tasty. It's great to have the leftovers on a salad the next day for a taco salad.
I completely understand getting tired of the same food--and I have a few ways to make grilled chicken a little differently.
I usually grill an entire package of skinless/boneless chicken on my gas grill--first and foremost--don't overcook it! Nothing worse than dried out chicken.
I often spice it while grilling--garlic powder, cayenne, fajita seasoning--all at once.
After removing from the grill--let it rest--cool off before cutting it (keeps the juices in)
I have this for my protein portions for several days.
I cut up my 4oz, and put it in a tupperware container for meals.
Things I'll add to it to make it more interesting:
dijon mustard--my favorite!
brown or yellow mustard
Walden farms ketchup
salsa
Walden Farms salad dressings: Blue cheese, bacon ranch, vineagrette--most are a little sweet for me--I add dried lemon juice (TrueLemon)
Walden farms spicy bbq sauce (a little sweet for me--I add extra garlic)
dry fajita spices (pepper, garlic, cayenne--no salt)
My counselor suggested I make it a one container meal (for when I stay late at work and need dinner):
chicken, salsa, black beans, cut up tomotoes or broccoli--this is GREAT!
this would also work well with the salad dressings instead of salsa
Basically, I look through the fridge for anything legal that I can throw in there--and almost everything seems to work out well.
