  • Broth-based soups!

I just had some of the infamous cabbage soup as the bulk of my lunch. I know the official recipe has other stuff in it, but I just boil a head of chopped cabbage in 2 boxes of chicken broth. I love it, though it would get old fast if I ate it all the time.

Sometimes we go out for pho (Vietnamese beef noodle soup) and I just special order it without the noodles and I add in veggies if they can do that (else, I hog the bean sprouts -- these make a great noodle substitute when they are softened by the hot soup).

Miso soup is another quick and easy broth based soup, if you have any miso on hand. You can put spinach in it if you have any handy.

Of course, all of these are high in sodium, so you might need to watch that (though recent studies are suggesting that salt might not be bad for us after all).
  • Strawberries! They are RIDICULOUSLY low calorie per tastiness. 145ish calories for a pound. Expensive, but one of those things that I can completely pig out on and not feel guilty. Also I would second cucumbers. They are great with salt, and 2 cucumbers + 1 pound of strawberries comes to about 230 calories and is certainly enough to fill anyone up.
