diet soda BROWNIES

  • I posted awhile ago about diet soda cake. Yesterday I tried it with brownie mix, and it didn't seem to come out as good as the cake did. The mix was very watery, it baked ok although some parts seem less baked than others and the taste of soda is very obvious (more so than the cake where I could taste chocolate and not much soda).

I think I made the mistake of just dumping the whole can of soda in instead of mixing a little at a time to just get the mix wet...? does anyone make brownies this way ? Is there a different ratio of soda to brownie mix since it seems different than the cake mix?
  • I'm curious, what are you substituting the diet soda for?
  • It's a sub for the oil, eggs and water. Basically, it's just the cake or brownie mix and the diet soda you are baking.

I think you should compare the amount of eggs, oil and water called for on the cake mix with the amounts on the brownie mix. For example, if the brownie mix calls for half of these as compared to the cake mix, then use half the can of diet soda. I think this is a great idea and I have never heard of it before. I did a search for "diet soda cake" and found several suggestions for it. For me, I would have to take into consideration the amount of carbohydrate and sugar in the mix as I am diabetic.

  • thanks. When I was in the store I noticed Pillsbury does make sugar free and reduced sugar mixes, I will have to try those since they are a little lower in calories as well.
