Can we put the veggies in broth and make a soup ~ and have that twice a day with the packets? Or is it better to have a cucumber or other raw veggies to get our 2 cups???
you can do anything you want with the veggies soup is an excellent way, I very rarely eat my veggies raw. except for cucumbers of course. Kale chips, turnip chips and roasted broccoli and cauliflower are some of my favorites.
I have been really enjoying cutting up mushrooms and celery, sauteing them it a little low sodium chicken broth, and then adding the IP chicken soup to that. It is so filling that I can barely finish it. It's very tasty, too. I'm gonna try that with the mushroom and leek soups later this week.
I also like to thaw some uncut green beans or squash and saute them in a tsp. of olive oil and sea salt for a few minutes. Yum! Another idea is sliced jicama (not on the list but approved by my coach) and cucumbers with lime juice and sea salt. It's really good, too.
