Pot luck recipes?

  • Hi all-

    We're having a "healthy pot luck" at work. These things REALLY stress me out because I'm so self conscious about my cooking abilities!

    Does anyone have any go-to healthy/WW recipes for social events?

  • Do you have to cook it?

    If I were in your position and nervous about my cooking abilities (I'm not really, so I've never been there), I would bring a fruit salad, fruit platter or veggie tray.

    If you need to bring a main dish, look for a crock pot recipe. Easy to put together and when it's time to bring it, you just bring the whole pot of food! Super easy! Unless you don't have a crock pot...

    I like SparkRecipes (dot) com for healthy recipes. And most are super easy.

  • Last time I brought a trifle dessert I turned "healthy" and everybody raved about it.
    I used a nice bowl and layered yogurt with maple sirup, cereal and fruit a couple of times and topped it with another dollop of yogurt and sliced almonds. You can also use granola and vanilla pudding or whatever you think works with fruit.

    People were so happy about it because it was a more or less guilt-free dessert after overeating on the rest. Usually desserts are store bought brownies and muffins and everybody had too much food already by the time they got to desserts.
  • I like to make American Chop Suey . Use 1 lb ground turkey and 1 box of whole wheat pasta. Boil the pasta and set aside. Brown the turkey in a frying pan and then put it right into the crock pot with tomato sauce, chopped green peppers, chopped onion, garlic, salt, pepper and oregano. Let it cook for 3-4hrs on low in the crock pot (until peppers are soft). When you are ready to serve add the pasta into the crock pot and stir, you're done . Easy and it is yummy!
