Parsnip fries!

  • First off, I'm happy to say that this is my first week back from a week long cruise and I didn't gain while I was away! I've been cooking up a storm since I got back and today I tried making parsnip fries. Oh my god...yum!! They are so easy to make. You peel a few parsnips and cut them into pieces of even thickness. Then put them in a bowl, spray with cooking spray, add chili powder, garlic powder and salt. Mix it up and bake them at 420 for 25 minutes, flipping halfway through. These things are 0 points of deliciousness! You could count them as 1 point for the cooking spray if you felt like you used a lot. Very good with ketchup! They definitely aren't french fries but a good substitute. I wish I'd known about these things earlier!
  • Excellent job on not gaining! THe parsnip fries sound good, but I"m not sure how they could be 0 points. One cup of cooked parsnips is 3 points--not sure how many parsnips make up one cup, but even 1/3 of a cup would be 1 point.
  • On e-tools it comes up zero points for a cup. I just entered it into my tracker. Another good thing i discovered yesterday was jicima!!! Delic!!
