Drizzle it over your salads. Use it to saute meat or veggies. Worst case, just add it to your protein shake. 2 teaspoons is nothing, so it should be easy to meet the goal.
Add it to your salad; or spread it on your bread and bake it. If that's too boring add some chicken and melt some fat free cheese on it. It's good with mushrooms too. I like to saute sliced mushrooms in olive oil and some cajun seasoning. Makes a great snack!

I like eating greens, steamed veggies and salads, so everything gets dressed in olive oil and lemon juice. When I'm eating Italian at home, I toss my whole wheat pasta with olive oil. Instead of garlic bread, I make a small bowl of seasonings that includes chopped garlic, fresh ground black pepper, toasted sesame seeds, ground up toasted pumpkin seeds. I dip the bread into the olive oil and then the seasonings.
If you like the taste of olive oil, try to find a high-quality oil, usually from Greece or Spain. Trader Joe's carries both types. If you want a lighter flavored oil, go with an Italian brand. The extra-virgin oils are stronger in flavor.
Dress grilled fish with an olive oil dressing. Grate a red onion, add a bunch of chopped parsley, the juice of a lemon and a little salt. Mix it all together, then with a fork, slowly drizzle in half a cup of good olive oil. Then pour that over grilled fish like salmon or trout. Also good on chicken breasts.
I find the easiest thing to do is to mix it with equal parts white vinegar, 1 tsp of sea salt, a few grinds of pepper and a sprinkle of salt free seasoning mix (Garlic & Herb Mrs Dash is my fave). Just shake and use as dressing on salads, marinade on meat... anything, really. Not that creative, but tasty.
Be careful you don't go overboard! I started making my own salad dressing (very similar to what usmcvet outlined above but with a few other add ins) and was also using it when cooking meat or veggies. I think I ended up consuming too much olive oil which has really slowed down my weight loss over the past two weeks because there's a good amount of fat in it.
I know you're having a hard time getting it in now, just wanted to also caution you about the pendulum swinging the other way!
I have started adding some to my bedtime shake on the days I haven't used it during the day. It makes the shake creamier, and you don't taste if when it's only a tsp!
