  • All I can say is OMG YUMMMMMMMMMMMM!!

    They were awesome even the kids loved them (even though I lied and said they were mashed potatoes lol) I ate a big amount because I had 6 carbs left for the day and only got 4 out of them but man were they good!!!
  • oh yeah ps we will never be buying potatoes again to do mash! I can totaly live with out them now that I have this! I used to LOVE mashed potatoes but HAHA you lose I win! Well cauliflower does :P

  • I've been wanting to give them a try. Do you just prepare them the same way you do potatoes?
  • The trick is to know what to put in them to make them taste good! We use some salt, sour cream, a splash of heavy cream, butter and chives or parsley. YUM YUM! I hated them at first, too because they seemed watery -- but once we learned to use the sour cream, it was awesome! We're going to try making them with Fage next time since it's got a texture and taste similar to sour cream but less carbs and higher protein.

  • I steam the cauliflower then mash it with some Laughing Cow or Weight Watchers flavored cheese wedges, black pepper and a bit of red pepper. My current favorite is WW Parmesan Peppercorn wedges. Sometimes I use a variety, depending what I have on hand.

  • YUM! I love to put them in the oven, top with cheddar and bake until bubbly. So good!
  • I got the idea from the recipe kim posted but I made them like I do mash potatoes except for heavy cream instead of milk. I just do cream, butter a little sour cream, salt and pepper. I didnt use any water the little bit of cream and sour cream I used along with the little bit of water that didnt come out of the cauliflower when drained was plenty to make it like mashed potatoes SO YUMMY!

    My husband did too. He said that he didn't like the taste or the texture, but he loves the way I make them now. The difference, just a bit of mashed potato flakes or a very small potato boiled with the cauliflower to make them taste more like "real" potatoes.

    For one whole cauliflower, I also add enough instant potato flakes for one or two servings of mashed potatoes. When I use a 2 to 2.5 lb head of cauliflower, it makes like 10 servings (1/2 cup) so that's only 8 to 15 calories (2 - 4 carbs).

    If I use a real potato I boil it with the cauliflower. If I used mashed potato flakes, I weight out the serving on my food scale and then add it while mashing.

    I also tend to "spiff them up" with a ranch dressing powder or garlic powder and chives.
  • Another tip I just learned.

    Undercooking the cauliflower, ruins it. Last night I made some and the cauliflower was undercooked. It was fork tender, but not tender enough to mash well.

    Not only was it too lumpy, the cauliflower flavor dominated, even with the serving of mashed potato flakes in it.

    Almost overcooking the cauliflower seems to be the key.

  • Yeah, but it was gross because I hate cauliflower! However I have done the spinach crust and the egg and cheese crust and they're both delicious.
