Leenie Leenie.. I can't believe you already forgot my spaghetti squash recipe. Here it is:
Saute some red, white or yellow onion in olive oil ( or water or broth even will work). Add some garlic if you like. Saute til onion is slightly browned.
Chop up a tomato or two, add them to the onion. Cook just until the tomatoes are warm. Remove from heat. Add some fresh chopped basil to this.
Scrape the spaghetti squash from the rind into the pan.. it should make long spaghetti like strands. Put the pan back on the heat and heat until the squash is warm. Remove from heat. Toss in some feta cheese, mozzarella, parmesan.. whatever tickles your fancy. Mix this all up and serve. MMMMMMmmmmmmmmmm good. I end up adding some garlic salt to this when I eat it, but boy oh boy is this good!!

I didn't do much this weekend, which is fine by me. Saturday was my catch up on my sleep with an afternoon nap day. I did some chores this weekend.. cleaned kitchen thouroughly, swept and mopped the grody kitchen and dining room room floors, tided up living room, did some recaulking of some tile (

this didn't go very well.. I am going to tape off stuff next time) and I polished all my copper. This may sound weird, but I love polishing the copper.. it is so relaxing and you see immediate results. I made my homemade lean pockets, some chicken and a zippy zucchini casserole. I also did a little laundry, played with the kittycat and yapped on the computer. Back at the old grind at work today...
I got up and did my exercises this morning, as usual. It is nicer that it isn't quite as dark in the morning. Of course it would be nicer if I would exercise as I slept..

I've been slacking off on my evening weight lifting work and I need to get my butt back in gear.. the morning work outs are fine, thank goodness. Maybe now it is getting lighter early, I'll start getting up at 4:45 to exercise... than again maybe not
