What's for Dinner?

  • Just wondering what everyone is planning for their Sunday dinner. I adore cooking, but I need fresh (healthy, low carb) ideas to keep me motivated.

    I haven't decided for tonight but I have a couple of options:

    I bought a no-carb Alfredo sauce that I'm going to try with shiritaki noodles, chicken and broccoli one night this week. This is option 1.

    Option 2 would be a combo turkey/extra lean ground beef meatloaf with mashed cauliflower on the side.
  • talapia with mashed yams, and probably green beans on the side. we bought some yams at the farmers market this morning, as well as some raspberries -- had some in a fruit salad with lunch today, a little end of summer splurge.
  • pasta, tomato sauce, parm cheese, tossed salad with evoo/balsamic vinegar, toasted olive bread.
  • I'm not going healthy or low carb today. It's Sunday! I am making good ole' Italian family lasagna with italian sausage and ground beef (well, the beef is only 7% fat). Salad on the side.

    I will only have a little bit and enjoy the extended family enjoy their Sunday treat.
  • We had a big make your own Greek salad for halftime
    Spring Mix
    Chilled Shrimp
    Bell Pepper rings
    Cherry tomatoes
    Cucumber spears
    Feta cheese
    Beets
    Hard boiled eggs
    Black olives
    Potato salad (Yukon gold potatoes, onions, celery, olive oil mayo, celery seeds)
    Olive oil based Greek dressing
  • I'm in the middle of making a big ol' pot of soup: Spicy Acorn Squash & Tomato Bisque (sans cream). I'll probably have some collard greens or a salad on the side, and a piece of toast to round it out.
  • We are grilling chicken burgers (instead of buns we use sandwich thins), boudin sausage, baked potatoes (with salsa) & a big salad. Boudin is my splurge

  • Tonight is Indulgence Night at our house. We're having a big dinner and then watching movies.

    Dinner:

    Chicken breasts stuffed with brown sugar, rosemary, & sage, rubbed with fresh lemon wedges and sprinkled with smoked mesquite seasoning.

    *Baked potato bar. Will have real butter, bacon bits, sour cream, chives, ranch dressing and other toppings available on the sideboard
    *Steamed veggies w/ or w/o cheeze sauce
    *Salad with fresh veggies
    *fresh lemonade{not using the lemons from the chicken, lol}

    For movie night-

    Stuffed peppers, home made kettle korn, and whatever gatorade is left from our weekend adventures.
  • We had yummy baked zucchini fritters, scrambled eggs made mostly from eggbeaters, and whole wheat toast.
  • Quesadillas made with whole wheat/low carb tortillas, precooked "southwestern style" chicken strips, fire roasted green chilis, cheese, and tons of fresh salsa.
  • I made enchiladas for the kids and saved a bit of the sauce for myself and poured it over some chicken breast and mashed cauliflower for myself. Sounds super weird but it tasted really good!
  • Whole wheat spaghetti, homemade veggie sauce (onions, garlic, basil, red peppers, broccoli, and spinach... so basically whatever was in the fridge!) and a tossed salad that basically consisted of tomatoes, iceberg lettuce, shredded carrots, and balsamic vinegar.
  • I had an unexpectedly unhealthy lunch, so I am keeping dinner on the healthy side. I'm making this: http://www.food.com/recipe/potato-co...rock-pot-92262 but added way less corn so it's more of just a vegetable soup. It smells really good, but isn't done yet.
  • I don't follow a low carb plan, but I think what I had for supper tonight fits within your parameters:

    - 1/2 lb steamed mussels
    - grilled salmon fillet
    - fresh asparagus sprinkled with parmesan cheese and garlic and roasted
