4 h/b eggs,smashed w/a fork
1 stick celery,diced
1T lemon juice
1/3 c grated swiss cheese or more if you want
mayo to taste
Mix all together and refrig for an hour.
pile on a lettuce leaf and enjoy the heck out of it.

I don't have the carb count but i don't think it amounts to much--at most 3 or 4
