Ranch chicken




  • 8 chicken breasts- ( or more I've made this with up to 14 breasts, use boneless, skinless or regular chicken breasts)
    1 cup sour cream
    1 cup mayonnaise - I used Duke's
    1 packet Hidden Valley Ranch Mix- dry powder
    1 large can mushroom stems and pieces - or fresh
    1 cup cheddar cheese - I shredded my own

    Place the chicken in a casserole dish.
    Sprinkle mushrooms over the chicken.
    Mix the sour cream, mayo, and ranch powder and spread over the chicken. Sprinkle cheddar cheese on top.

    Bake at 350 for 45-60 minutes.

    This is from the AOL Sugarbuster's folder - we have all made it. I also gave the recipe to my SB support group that meets in our clubhouse on Saturdays - they all made it and love it! And I understand it freezes well too. Great as leftovers. One gal told me she added asparagus before sprinkling the cheese on top - and had a great reaction!

    I never made it that way but why not! I can tell you that everyone who has made it loves it and it also freezes great. wonderful as leftovers too.
  • I tried this recipe this past Sunday (deleted the mushrooms) and it was DELICIOUS!!!!!!!!!!!!!! Had a leftover piece for lunch the next day. Simplicity itself to make too!

    I made this the other night and it was wonderful. The family loved it too. My mom even had seconds, which is very rare. I will be making again soon for sure.

    I made this last night and it was... okay. I used fresh mushrooms (8 oz. pkg) and they cooked very nice with the sauce on top of them. The cheese melted and browned perfectly. The chicken... uh-oh. What happened was the water from the mushrooms baked out and filled the casserole dish about 3/4 full, with the result that the chicken basically boiled itself in the oven for almost an hour. Came out very tough. I suggest if using fresh mushrooms to saute them or mic them or something to render the water out of them first. I'll try this again in a couple of weeks.
