Favorite Recipes

  • Everyone post a recipe here! It doesnt have to be exact, as I am sure most of you are like me and just throw things together!
  • French Toast w/ apples
    exchanges: 1/2 protein, 1 starch, 1 fruit

    1 egg
    1 tbs milk
    dash fake sugar
    dash cinnamon
    dash nutmeg
    apple (sliced)

    Saute apples in a pan sprayed with Pam until tender. (I usually add maybe a teaspoon of water and use a lid so they steam) Add some sugar, cinnamon, and nutmeg for flavor. Set aside.

    Beat egg. Add milk, cinnamon, nutmeg, and fake sugar to beaten egg. Add 1 slice of bread and let stand until most of the mixture is absorbed.

    Brown in a pan sprayed with Pam.

    Top with hot apples.

    Note: If you want to use your fat, you can use margarine in the apples. It makes it a bit richer.
  • Zucchini-Tomato Bake
    exchange: 2 veggies

    1 cup zucchini (or yellow squash) cut into 1/4 inch slices
    1 small tomato (sliced)
    1/4 tsp salt
    italian seasoning (I use one of the Ms Dash blends)

    --Spray baking dish with Pam.
    --Place zucchini in dish and sprinkle with salt and seasoning (I use pepper sometimes too...whatever you like!)
    --Place tomato slices on top.
    --at 1 tbs of water
    cover and bake at 350 for 15-20 min

    Sometimes I sprinkle 1 serving of cheese on top if I have not used my dairy yet! YUMMY! Then you can actually uncover it after 15 min and broil it for just a couple minutes to make the cheese bubble and brown.
