4 oz. leftover london broil from yesterday, quinoa with LOTS of spinach, and microwave "sauteed" mushrooms & onion, and 2 TBL parm cheese I think I will use the spinach as a bed for all the other stuff. Maybe a splash of balsamic vinegar over the top of it all.
Southwest pattys. Take 1 lb ground beef {93/7}, add 1/2 c oatmeal, and one package taco seasoning. Form into 4 pattys, cook in skillet. Remove pattys keep warm. Add corn, black beans and diced tomato to the skillet heat though. Add pattys to skillet, top with 1 slice each colby-jack cheese. Let cheese melt a little. {each patty is 270 cals. 1/4 salsa is 118}
