Taco Soup

  • Does anyone have the Taco Soup Recipe? I heard it was really good. Thanks!
  • I'm not sure what Taco soup recipe you mean, but I use one from a cookbook that comes with Richard Simmon's foodmover. It is quite simple and yummy.

    1 lb. ground turkey (low-fat)
    1 packet taco seasoning (reduced sodium)
    1 packet ranch dressing seasoning
    1 can stewed tomatoes
    1 can diced tomatoes with chilies
    1 can black beans
    1 can kidney beans
    1 cup water, broth, or lite beer
    (1 cup frozen corn
    1 can white beans)

    Brown meat, drain fat, add seasonings, then the rest of the ingredients and let simmer.

    It is a bit salty for my tastes, but otherwise very yummy and thick.

    By Richard's standards (kinda like the diabetic exchanges) 1 1/2 cups is worth 2 carb portions, 2 protein, and 1 vegetable.

    I omit the last two ingredients and save one carb serving for a snack of graham crackers before bed!
