Anyone Have A Copy of Eat Clean Family & Kids?

  • if so would you pretty please post the tilapia recipe that uses Kashi? My copy is at my parents in storage and out of the blue the kids are asking for it. I've checked every book store and healthy/natural store I can get to safely in our road conditions and none of them have a copy in stock. I've checked both my 'grown up' tosca books and the site and cant' find the recipe anywhere in/on them.

    Fish Sticks

    1/2 cup crushed Kashi High Fiber Cereal or Original 7 Grain TLC crackers
    2-3 egg whites mixed with 1 Tbsp water
    4 6-oz tilapia filets
    1 clove garlic passed through garlic press
    1 Tbsp herb seasoning, like Old Bay
    Eat Clean cooking spray

    Preheat oven to 375. Line tray with parchment paper or spray with cooking spray. Cut fish into 3" x 1-1/2" rectangles. In one bowl, mix crumbs, seasoning and salt and pepper. In another bowl, mix egg whites and water. Dip fish in egg whites, allow excess egg whites to drain off, and then dip into crumb mixture. Place on baking tray. Cook 5 minutes on one side, then flip and bake the other side for about 4 to 5 minutes. But keep an eye on them; they should be golden brown when done.
