String cheese crackers changed my life

  • Not to be overly dramatic, but this is what I have been looking for. I made some tonight from 2 lf cheese sticks and it was as good as having chips. I put a pinch of cayenne on top of each. What thrills me so much is that I can make these and BRING THEM to places where I would normally be tempted by other crunchy things.

    I go to the movie theater a lot, and not getting popcorn kinda sucks! But these I could easily smuggle in!

    I've got cheese sticks but no parchment paper. I suppose I can use waxed paper.....

    OK, I just made them.
    They're really easy to make, but I think I'll keep getting my crunch from my almonds and pistachios.

  • I agree mmc..they are just lovely!! I also love the crispy turkey pepperoni. And when you put the two together..holy smokes!! Delish!

  • I haven't tried this with string cheese (not my favorite), but I did try cheddar and parmigiano, with bad results. I just did the version where you melt shredded cheese on wax paper in the microwave. But they never got crisp and were pretty gross.

    Any tips or secrets?
  • re: the parchment paper...I use paper plates and they work just fine! I love these and they have kept my hands out of the triscuits many many times. I really need to try the pepperoni and roasted chickpeas.

  • Your endorsement made me try them and I like them. I get of a bit of aftertaste though. But with some turkey pepperoni, YUMMY! Totally movie worthy.

    DON'T USE WAX PAPER! It sticks! I cook them for about a minute and 15 secs and they don't all harden too much but they are good nonetheless!
  • Ah, I *said* wax paper, but I meant parchment paper. Parchment paper is what I used. I don't even have any wax paper
  • I only had wax paper and it worked for me! I wonder why...

  • I saw this thread yesterday and decided to try it. I used lowfat string cheese. I do NOT normally like string cheese, by the way.

    I cut a stick into 8 rounds. Microwaved them on a paper plate (I think it had a liquid-resistant coating; good for helping not stick, maybe bad for consuming who knows what chemicals that leach from the coating...) for around 45-50 seconds, until they were bubbling and beginning to brown. I sprinkled garlic powder on, and - DELICIOUS!!!

    The only tips I can think of are: cook them enough - I didn't cook the second batch as much and they were definitely not as good, more chewy than crunchy.
    Unstick them before they cool too much (this may not apply for parchment paper)

    Re: doing the same with parmesan. I have done it lots, just shredded parmesan on a glass plate in a microwave. I have also done it in a pan and that seemed to get more oily and soft rather than crispy. As with the mozzarella, I found that if you don't cook it to the point of barely brown it has a rubbery chewy texture.

    Yeah, I think that might be the problem. I didn't want to burn it. I'll have to try once more one of these days.
