Low Calorie Creamy Vegetable Soups

  • I've been really into making vegetable based pureed vegan soups, especially "creamy" soups that vary from 1-1 1/2 cups in serving size and are at or under 100 calories. I make a full recipe and then freeze some for future meals. It really helps to have something healthy and quick, not to mention affordable!

    I am trying to get as many vegetables as possible into my day, attempting to get a very "comfort food", satisfying feeling and stay low calorie/high nutrient.

    Does anyone else like to do this? Anyone have recipes to share?

  • I puree my veggie soups too to make them thicker YUM!
  • I make all kinds of veggie soups and puree them.

    If I want a "cream" based I add a little starchy veggie like potato and use less water or broth then at the end make a tiny bit of roux with skim milk. I mostly do this with spinach and broccoli, most other veggies I prefer without milk.
