Tricolor Salsa

    TRICOLOR SALSA

    1/2 cup red bell pepper, seeded and finely chopped
    1/2 cup yellow bell pepper, seeded and finely chopped
    4 tsp. minced serrano chile, with seeds
    1/3 cup La Carreta cilantro apple cider vinegar or other cider vingegar
    1/4 cup finely chopped fresh cilantro
    2 tbsp minced shallot
    2 tbsp. fresh lime juice
    1 1/2 tsp. sugar (Splenda or other SF sweetener)
    1/4 tsp. salt

    combine thoroughly.

    Variation: add 1/4 cup finely chopped fresh basil
