Well I actually never cook by reciepe but make it up as a I go... that is why I never quite eat the same thing twice... My DBF loves it...
Last night I made a pasta dish that was fab...
I halved some vine ripened tomatoes and added frozen broccoli which I heated with garlic in about 1/8 of olive oil to create the sauce. I added WW linguine nooldes to the mix and served. It was awesomely delish.
I enjoy whole wheat pasta with lots of garlic, veggies, and pasta sauce. It's pretty plain I know, but I'm in college and a wee bit short on the cash. Frozen veggies are cheap, as are the pasta makings. Adding lots of veggies in has me eat more veggies than pasta and whole wheat pasta has nutrients plain pasta does not
I know these aren't recipes, but this thread has a link to a neat article on cheap, healthy foods and it inspired this thread where people shared more ideas.
Here's one I made the other day: Italian Vegetable Custard. It says it's a side dish in the description, but it fed my husband and I as a main dish with some left over. It's REALLY filling. I didn't use the olives, but I added some dried onion flakes when I mixed the squash and eggs. It's great because summer squash is cheap right now!
