Weekly Menu Plan

  • This year we have incorporated a weekly dinner menu that is standard every week. Lunches are usually left overs or quick sandwiches, but we make sure we have a nutritious dinner every night. This is what our weekly plan looks like:

    Monday - Vegetables and legumes night
    Tuesday - Seafood night
    Wednesday - grilled chicken breast night
    Thursday - Soup and salad
    Friday - Pasta night
    Saturday - Free night
    Sunday - Time consuming dinner prep

    So far on Mondays we always have blanched dandelion greens with a light vinegraitte, accompanied by yellow split pea puree or some form of dahl.
    Every other night is open for anythig, Tuesday could be poached salmon night or it could be calamari, or tuna, or sushi, or whatever is seafoodish. Lots of room for improvisation but always making sure we're getting plenty of veggies, protein, and legumes.

    Saturday bbq potluck with the neighbors
    Sunday spaghetti lunch, black eyed pea masala with brown rice dinner
    Monday leftovers
    Tuesday baked eggplant patties w/side salad
    Wednesday Fresh tossed veggie ravioli w/side salad
    Thursday Crispy ginger (mock) beef with brown rice
    Friday grilled bbq teriyaki chicken w/side salad
